GrasFed Lamb and Beef

(Lindsey E Dixon) #1

I have a pound of grass fed ground lamb meat. Also, have 2 pounds of gras fed hamburger meat found on sale at Kroger. Looking for recipe ideas besides cooking it up and eating. Maybe pasta? Burgers? Stufffed veggies?
Need quick, yummy ideas as i am a nurse! So important to plan&prep properly for those 12-14 hour shifts!

Go Greek. Meat balls, Greek yogurt, cucumbers, a little bit of diced tomatoes, thin sliced onions. Look up spices. Use cloud bread as pita. Yumm.y.

Go Turkish:

You don’t even have to skewer. You can make flattened meatballs, like thick slider patties, and cook in a pan in some oil or butter.

Go Italian (okay, so I couldn’t resist this). I just finished off a pound of grass feed beef that I made as a bolognese and served over zucchini noodles.

I’d just eat a good ragu with a spoon and call it a day. Pasta might be in the way.

I successfully made oven-baked home-made gyro meat with 1 lb ea. ground grassfed lamb & beef. You mix together with spices, (there are numerous recipes to Google) & more fat if needed, and process till a paste in your food processor; form into a 1" high x 9" w loaf on a cookie sheet, bake till done; cool and slice medium-thin. Fry sices in a frypan till crisp for gyros. Yum-o.

I have made the kafta 3 times in the last 2 weeks! They are amazing. I used 1 lb. each of the grass fed lamb and beef. I smell like a BBQ after cooking them on the grill - they are super fatty! My husband and son can’t get enough!
