Going away

We are going away for a week to a cottage and I wanted some easy meals I can meal prep before so I’m not inside all day. Any thoughts? Want to stay on track!

Make a bunch of bacon. It is good cold or hot. Hard boiled eggs. Wash and chop some lettuce. Make up some good keto ranch. Jar of olives. String cheese. Salami. Those are my lunch go-to foods.

For dinner, perhaps a cheesy cauliflower casserole. Crustless quiche. We pretty much cook a meat and two buttery veggies at our house for dinner.

I went away by myself recently and one of the easiest meals I made was thin slices of ham laid out overlapped, in a row, then an avocado chopped up and spread out over the ham. Then sour cream. Then a drizzle of sriracha sauce. Then I rolled up the ham into a kind of mini burrito and sank my teeth in. It was really good.
Another time I did something similar with mustard sardines, soft boiled egg and avocado spread out over the ham slices. And sriracha of course.
