Glorious Roasted Veggies

Thought I’d start a thread on the wonder and delight that is The Roasted Veg.

Last night I casserole-roasted a mixture of halved Brussels Sprouts, cubed celery root, and cubed rutabaga. Dressed with olive oil, S & P; roasted about 75 minutes at 400°F (~ 200C). Sublime.

Any other successful combos, discoveries, or experiences? Please share!,

Next time try it with lard or duck fat!!! :yum::yum::yum::yum::yum::yum::yum:

brussels sprouts, bacon, cubed butternut squash, pecans and about 1/4 cup of dried cranberries… little bit of sugar in the cranberries but they are spread pretty thin

Honestly, I have a hard time with veggies. Spent a few years in Alabama and loved the veggies the locals cooked. They would mix in leftover bacon grease. I should do better with veggies, adding fat may help.

Veggies are a great carrier of fat. I also like that they slow the digestion of protein so that I minimise any spike in insulin from that.
