As avocados are high fat omega3 veg is it not a good idea to cook them into crispy patties in a frying pan, vis-a-vis oil oxidation?

You can cook with any oil you like if it’s a healthy one. Whether it’s good/bad is dependent on how much heat you hit it with and the point where that oil starts to oxidize, and even then there’s no shortage of fearmongers out there that severely overplay that hand.

There’s no shortage of chefs that would strongly disagree with that one. EVOO has a smoke point between 350-400 degrees, which is more than enough to pan fry a lot of stuff without torching it. Avacado oil gets closer to 500 before it breaks down, but who frys anything that hot? I worked in restaurants for many years and don’t think I’ve ever seen a fryer set hotter than 375.
