Freezer recipes with fish

Hey all,
I have a pretty good system for packing lunches. Every time I cook up something delicious, I try to have plenty of leftovers so that I can portion food into Mason jars and store the extra in a freezer. Then, before I leave for work, I grab any mason jar from the freezer and have a preprepared and varied meal.

Lately, I’ve been thinking I’d like to eat more fish. Two problems, I don’t like fish all that much and the thought of frozen, old fish sounds even worst to me. Occasionally, I’ll have some Salmon and that will be good. I’ll also have some tuna sometimes too. And I do like raw fish (sushi) mostly because it doesn’t taste fishy to me.

I learned how to cook when I went keto a year ago and I’ve never cooked any real fish. Everytime I think of eating fish, I think of it as a whole piece of fish so that wouldn’t really fit into my freezer plans and isn’t appealing to me anyway.

Anybody got any ideas for someone that wants something more casserole like so that it would fit in a mason jar or be easily wrapped in foil that a non-fish lover might be convinced to eat? And that keeps well? Any tips for cooking fish that make it less fishy?

Too much to ask?

Mom used to make a noodles and tuna casserole, which you’d have to pretty thoroughly ketify.

So zoodles and tuna would be a good base, and the peas could stay or be replaced by bits of Brussels sprouts, but you’d have to find a substitute for Campbell’s mushroom soup. (There’s got to be a good keto mushroom soup recipe floating around.) Then top it off with bacon bits instead of bread crumbs.

If it comes out anything like the original, you could make it dry enough to clump, and cut appropriate-sized blocks off to freeze or take to work.

I liked this one. WHen it was cool, I cut it up into single serving portions and put in sandwich bags that I then put inside a larger freezer bag. I grabbed one at a time in the morning, and nuked it in the microwave at lunch. I used fresh salmon, but will try it with the can of salmon I have in the cabinet.

I bake up salmon and use that to top salads for lunches.

I also like to make tuna salad using tuna and sardines, so we call it seafood salad. I blend in a tin of sardines with the tuna, just before adding the mayo, etc.

I am going to try this one soon, because her stuff comes out nice and I love fish cakes.
