Feeding a big group - Need help with what to make

(Pam) #1

Ok - so here we go. On Friday nights we have “game night”. About we have anywhere from 8-10 friends come over. Makes for a total of 12-14 including my family. We play games, eat, and hang out and have a great time. Issue being usually we all chip in on food and cook at my house, or we order pizza or something. We have 4 on keto, 1 totally gluten free, 1 who does not eat pork or shellfish (religious), 1 who is just really picky, and the rest seem to eat pretty much anything.

I am new to the keto thing, but I need to figure out something we can cook that’s not expensive, fairly quick and simple, and will fit into everyone’s diets. Last week we just ordered pizza and the keto people just ate the toppings and cheese. Not fond of that idea - a lot of wasted money in my opinion.

Any ideas? Only thing I can think of is burgers - but when I suggested it everyone kinda blew it off.

What about this?

Personally we double the meat and double the recipe. That should easily feed 12-14 people, especially if you include a salad (those are cheap and easy) - I like using Cheese Whisps as croutons.c

You can also make basic biscuits with fathead pizza dough. I omit the egg and in some baking powder (to help it puff up).

That’s not a bad idea - that’s for the suggestion.

Some keto appetizer suggestions back when Super Bowl parties were being planned:

  • Meat and cheese tray
  • Deviled eggs
  • Jalapeno Poppers
  • Stuffed mushrooms
  • Faux-tato salad

I always turn to big hunks of meat, brisket or pork shoulder, but I use a sous vide and then smoke them. OK if you have that stuff, and easy to do, but you need about 3 hours for the smoking, which you might not have.

“Any ideas?”

Get new friends.

:joy: (sorry, just joshing!)

Okay, how about:

  • cheese, pepperoni, olive, pickle, veggie, dip tray
  • deviled eggs
  • chicken, tuna and/or egg salad (maybe with olive if you want), with bread/rolls for people who want a sandwich
  • taco cheese soup (per batch - 2 c. heavy cream, 1c water, 1 boullion cube, 1 tsp. cumin, 1.5 tsp. hot chili powder (not that hot), cayenne, 1/2 tsp. (or less) xanthum gum, 1 8 oz. package cheddar cheese, chicken or hamburger if you want meat in it. My husband and I love this - obscene.
  • chicken legs and thighs with blue cheese
  • loaded salad (eggs, bacon, cheese, cherry tom., cukes, with blue cheese and/or ranch dressing options
  • savory cole slaw

My husband used to be in a euchre group once a month. They would have elaborate dinners/snacks. Each month, someone else would host. Games are so much fun and great social activity.

I didn’t even know what that was until a few days ago --so don’t have it or a smoker lol - and game is in like 1.5 hours lol ----- I am prepared :face_with_raised_eyebrow:

Soft taco bar! Beef for the non pork shellfish eaters, corn tortillas or tortilla chips for your no gluten friends and you and the keto friends can just pile everything on top of extra lettuce for an awesome taco salad. As for your picky friend, if you’re that picky bring your own food.

HA! Love that.

I was going to suggest pulled pork for a crowd, as it is easy to make ahead and reheat. Perhaps some pulled chicken or turkey for the non-pork eaters.

Then buns, chaffles, lettuce wraps and some sides (cole slaw, veggie tray with dip). Won’t work for this occasion due to time, but maybe for the next one.

You can also use a charcoal grill to smoke, if you have one of those. Something for the future, maybe.
