That’s a good idea. Just know that you will likely have a “higher” blood glucose response from rice due to there being two insulin responses – a short term one that’s based on what you ate before; and a long term one created by the pancreas mainly (I think). If you’re keto, you’ll lack the first response. If you ate carbs for a while then tried the rice, you would have a smaller blood glucose response. This is Ben Bikman’s idea, not mine.
If you want a better “protein” response, try ham, shrimp, mussels, or something that’s almost all protein and low fat. The detriment might be a small amount of carbs, which these have. I can’t think of anything (real food, not a drink) that’s high protein, low fat, but zero carb.
I will swap the beef for shrimp - just bought some frozen the other day so have it on hand.
I am keto and plan to test each of these mid-morning before I have had anything to eat except coffee with a little cream. That way the baseline should be similar. Not a rigorous test LOL - just my own curiosity about how my pancreas responds to the different food groups. I know none of them are “pure” but the closest I could get with what I have on hand.
I will start on Saturday as tomorrow I am breaking my fast and my glucose is lower than normal so want to start on a typical day, not a post-fasted day.
I’ll be interested to see the results. There’s a lady on Instagram who does a ton of these tests, but she’s doing things like white bread versus whole wheat (only slightly better), but then eating/drinking something before the bread, which lowers the spike she gets.
My guesses: fat and protein = 0 rise; rice will be high. I’ll be interested to see the “width” of the spike, because mine are always about 1 hour, except for pizza, which causes high blood sugar for a long time.
Breaking my fast at 10:30 am today - 71 hours. I struggled a bit yesterday so I drank some pickle juice and that helped.
Happy with my Stelo so far as it has been tracking closer to my KetoMojo meter than the Libra I wore a few years ago.

Stelo glucose: says “below 70” which the the low threshhold it set when I activated the device.
That is the lowest glucose/highest ketones I have had in over 5 years at the end of a fast. Not sure why, but I will take it. I am fasting mainly for autophagy so nailed it with this fast, but also would like to drop another 5 STUBBORN pounds and keep it off.
Will not fast again until March, so will join the March fasting thread when we decide which week.

I wondered about drinking pickle juice, as I was going to do the same. Dr. Fung used to suggest drinking bone broth during a fast, but I found that triggered hunger for me. I’ll try pickle juice next time.

I agree - bone broth would trigger hunger in me, too.
The nice thing is my glucose didn’t budge one bit from drinking the pickle juice and it really helped me.

I did the test on the rice yesterday and decided to post on my accountability thread since not really related to fasting.
I ended up cooking breakfast this morning so wasn’t able to try the same number of calories in fat or protein, but the data is still very interesting since I had 75% more calories and quite a different glucose response. So much for all calories are the same! But we know that - just wanted to see the data myself LOL.

Time for my 2 week followup. My progress has slowed, and actually my skeletal muscle dropped a tad even though my lean mass went up a bit… that is so curious to me. The good news is that my fat loss continues. So my overall weight dropped from 179 to 177.2 according to my Renpho or 176.6 according to my Hume. My SubQ dropped from 18.9% to 18.1 per the Renpho or 18.8% per the Hume. BF dropped to 21.6 from 21.8. Lean mass went to 130 Lb from 129.9. So even though my skeletal muscle mass dropped a pound, I’m chalking that up to making fewer protein smoothies with creatine. So, a slight disappointment here, although my strength is typically improving, and I visibly have more muscle than last Nov… Anyway all in all I am still pleased with my overall progress this year as the fat loss continues even if my muscle growth is harder to determine. Weight wise I am essentially exactly where I started back in November, but with less fat and more muscle. That means I don’t have the fat to lose this year after gaining muscle. That’s respectable being that I’ve lost about 6 pounds of fat, but is still short of 20 or so pounds I figured I need to lose to get to 11%. I think I will work harder on fat loss in March… which means less carbs.
So, I went on a high carb spree (partly not my “fault”), and had horrible leg cramps. Got up, put an LMNT in some water. Drank part of it, and had an immediate cessation of cramps. Turns out this works similarly to pickle juice. Must be the salty taste or similar that causes the cramps to stop.
I never had leg cramps off keto… Vegetarian keto ensured it, carnivore solved it again (at least if I had a decent amount of meat but low meat carnivore is a weird thing anyway. I still did that in the beginning).
Sigh. Lunch skipping is tricky but it happens sometimes and I often have a smallish lunch lately. It still would be way better just to skip it…
These are some of my data from my last 4.5 day fast. The left reading is from my pinprick meter, the middle reading is ketones, and the right reading is from my CGM:

7.2 mmol/l is the highest ketone reading I’ve ever seen. That was in the morning of day 4.5. The first reading (starting with 80) was at night, the next two (98 the 75) were morning, night, etc. The 103 was the morning after I started eating again.
@Chezza and @OldDoug I think those levels are because I’m on a drug (Jardiance) for my “left bundle branch block”, which is where my left and right sides of my heart aren’t “aligned”. This drug causes lower blood sugar (you pee it out) and higher ketones. I say this because in the past I’ve fasted 4.5 days and got way less ketones and slightly higher blood sugar.
@CFLBob I was using a Keto Mojo, but mine just died. It no longer reads the strip. Will probably buy another one, as I have strips I haven’t used.
They’re pretty much the one I’ve heard of the most. I don’t know of any sources that measured the accuracy of any keto meters like there has been on glucometers.
