Favourite Cocoa Powder

(Tim Quinn) #1

In Australia it seems we don’t get the same variety of cocoa powder as our American counterparts. For me personally, my favourite cocoa powder to use is the Coles-brand variety. I’ve tried Woolies-brand and the Cadbury Bournville varieties, but both of those I felt weren’t dark enough for recipes like Carl’s chocolate mousse.

Has anybody found any particularly nice brands/types of cocoa powder for cooking?

I’m not positive this would be available in Australia, but I buy this at Walmart and I know it’s also available on Amazon. It’s great for baking and a couple of different mousse recipes I’ve tried it in! I will say it’s not the best as far as dissolving to make hot cocoa goes…doesn’t blend well and in my opinion leaves the cocoa tasting a little too dark. But I ended up liking the taste of hot cocoa made with Lily’s chocolate, anyway. Hope this helps!

I use CostCo organic Cacao powder, it’s cheap and not too carby.

Cacao butter is harder to find. The best source in Canberra is Essential Ingredient in kingston

Ahh I forgot about that one, but with the size of the packet I wasn’t sure to risk getting it or not. The sheer quantity of things in Costco can sometimes be a problem if you’re just wanting to try a little bit first…

A general comment on cocoa is that the better types have a higher fat content. That’s one thing that’s easy to look for.

Aldi in Australia sometimes sells the Dutch cacao. Last time they did I literally bought a stack of it, because it’s 100% cacao and the really tasty.
