Smother a slab of salmon in bacon grease, salt, pepper, crushed pecans and bake until done… toss in broiler to brown the pecans… it is UH-mazing!!!

I put some into my Bacon Cauliflower Mash a few weeks ago, along with Bacon and some Smoked Bacon Gauda.

Basically this recipe, with added Bacon fat and used Bacon Gauda instead of regular (I also roasted the cauliflower rather than microwaving).

I sauteed brussel sprouts in it last night for dinner. Use it as I would for anything sauteing, adds wonderful flavor

Ooh you are asking my favorite question!

My all-time favorite use is bacon hollandaise. Substitute bacon fat for half of the butter in your favorite hollandaise recipe.

I love roasting broccoli or cauliflower in bacon fat and steak seasoning. Toss in a little lemon juice after cooking.

Get nice fat pork chops, sear in bacon fat and finish in the oven.

If I’m sauteeing onion or jalapeno for a recipe, I almost always saute in bacon fat. My husband makes a killer chili with habaneros sauteed in bacon fat.

Really, I put it in anything that might benefit from a little bacony flavor.

Oh, now this post makes me sad! I moved to Ireland and have not found any bacon with enough fat to give me leftover drippings. Also not finding lard, only beef fat.
