I’m about 8 weeks into my Keto journey, and I recently was sent this awesome (substantial, satisfying) recipe for Keto English muffins. It’s a must try
1 Tbs melted butter
3 Tbs Almond meal (or almond flour)
1/2 tsp baking powder
1 egg (beaten)
- Mix together well
- using small bowl (I use a tall jar like microwave container… make sure it’s tall/has high sides as it raises quite a lot)
- Microwave on high 90 seconds
- Turn out and slice in half
- Toast in toaster or on griddle for yummy versatile English muffin style “bread”
