Fathead donuts

My husband and kids brought home donuts. They looked tasty. But I wanted some I could eat on keto. So I use the fathead pizza dough recipe, but added some erythritol and cinnamon to the almond flour before mixing into the cheese mixture. Then I made an icing on the stove out of cream cheese, HWC and a few dashes of erythritol. When the donuts came out of the oven I put the frosting on right away and let it melt a little bit. Some got topped with cinnamon, the others got a few Lily’s chocolate chips. Mmmm, so good. I didn’t bake as long as the pizza crust recipe and so the inside was nice and soft.

Seems that fathead pizza dough has a lot of versitility. This is perhaps the 3rd or 4th non-pizza application of it I’ve heard of. I’m sure it won’t be the last.

This in particular sounds awesome, as I’m a big fan of donuts and would love to have some again. I’ll need to try this out sometime.

Did you bake them in the oven the same as the Fathead pizza, or do you have some adjustments for that?

I’m also curious how these would be deep fried like traditional donuts.

I was thinking about deep frying donut holes, but thought of it afterwards. I baked at the same temp as the pizza dough but adjusted the time to 10 minutes.

Great idea. About how much erythritol did you add to the almond flour?

I didn’t really measure, just kind of sprinkled it in. I didn’t want to add too many carbs. Maybe 1-2 tsp? I would be careful when eating the donuts. Similar to fathead, 2 is usually enough when eating them.

Make sure to watch them in the oven and take them out while they are still slightly doughy looking. I checked at 8 minutes and then added another 2 minutes.

As far as the recipe goes, I used the fathead pizza recipe:

1 1/2 cups shredded mozzarella
¾ cup almond flour (plus erythritol and cinnamon)
2 tbs cream cheese
1 egg

Which, by the way, If you haven’t made this pizza dough before it is a must!

I used the same cooking temp. I might lower the temp a little bit next time. Play around with it.

If anyone tries frying them please share!! Or if you add to the recipe I would love to know what you did. I’ll probably try something with it next weekend since that is when I have time to cook.
