Fasting has become a normal everyday thing for me

And this is SO freaking weird ! Unheard of for me ! I used to be starved after 4hrs without eating something. Nowadays, going on 1 month in, I can just go and go. I’m actually trying (when possible) to make myself eat my dinner around 4pm, so that by the time I have breakfast, it will have been 16 to 18 hours. But the problem is, I eat my big, fat breakfast at 8-10am, and I am just not thinking about food at 4pm ?
Im really feeling like I could probably get by on one meal a day… but the only problem is, I have to have my breakfast, before I can have my morning coffee… And I have to have my morning coffee, before I can consider standing up and doing anything  lol

…and my breakfast is pretty plain jane, to try to go the rest of the day on just that. I mean, I probably could… but not really varied enough to get all my nutrients. Whereas my dinner, is usually pretty balanced.

Is two meals a day, with a 14-18 hours spread from dinner to breakfast okay ?

Whatever you want to do is “okay.” Whose approval do you need?

I tend to have time to make breakfast, and time to make dinner, and usually skip lunch. So my typical workday is 2 meals with about 12 hours of non-caloric beverages in between.

That isn’t really fasting in the normal sense of the word. Just eating two meals a day.

Well I dunno…
I watch Thomas Delaur quite a bit, and he considers a 16 hours to be a decent fast… Only thing is, he talks about skipping breakfast, and again, that won’t work for me. I have to have some food in my belly to dilute my 20oz of double strength coffee
If I could have a 20oz Ribeye (speaking of which, I just had 20oz’es of Ribeye a couple hours ago ) and broccoli, and some kind of awesome Keto desert (like my GF makes almost daily ) I’m sure I could go 24 hours… Especially if I was busy doing something fun. I still catch myself wanting to eat because I enjoy it, but not because I’m actually hungry…
