I work midnights and Normally I have 2 days off together an that’s when i meal prep for the week. But this week and next I only have one day off so I need easy keto dinner ideas. Send away :slight_smile:

My go to easy Keto meal is canned tuna in EVOO, don’t drain, add 2 tablespoons of mayo and one of dill relish.

I eat with a spoon or scoop on Romain leafs.
Once I heated and melted cheddar on top then scooped into the Romain leafs for a quick, easy Keto tuna melt. But it’s super easy to just mix in a bowl and eat as is.

I do mostly quick meals in the microwave. I also do lazy meal preps.

Mix, or mash , or smash , or stir , or eat together or seperate
So many Choices :joy:

I do something similar but instead of Romain I use one/two (depending on my carb budget) of the low-carb wraps. One brand has an italian-seasoned wrap that was really good. I also add either mozzarella or other type of cheese chunks. I pair it with some spicy pork rinds. I’ve not tried doing it to-go (would probably make the wrap soggy), but it’s super fast and delicious.

I also go to tuna with mayo on a low carb wrap.

Or lunch meat spinach and lettuce.

My current favorite easy meal is chorizo and scrambled egg.

Fry up chunks of chorizo sausage until they release their delicious paprika-y oil, then pour in your beaten eggs, often I serve on some baby spinach leaves. Yummy and ready in under 5 minutes.

Cook up a big one-pot stew.
Put it in individual bowls in the fridge and microwave when needed.

cold meat and sliced cheese can be eaten like a sandwich, without even needing a plate.

I tend to batch cook, freeze in individual portions, and then have a choice of 5 or 6 different things in the freezer. Then in the morning I get a couple of meals out for us which will defrost during the day. I also have a stash of homemade lamb and beef burgers (minced meat, garlic powder, herbs and spices. Even onion powder in his) all neatly wrapped in clingfilm for easy defrosting.

Mr B then adds whatever veg he likes, microwaved, or salad straight from the fridge.

All of those options are quicker, easier and simpler than any bought ‘ready meal’

I do similar very simple meal preps. Basically just dump everything into a 9x13" baking dish, let it bake for a few hours (while I go do something else), then when I come back I put it into containers for the fridge and freezer.
