Easy Keto Foods?

#1

Hi, all! I’m a newbie needing some help! I’m in week 4 and have been feeling terrible with high heart rate and headaches. Trying combat with more water, increased sodium, multi-vitamin and more leafy greens.

Here’s my issue though. I work a desk job 8 to 5 and have quite a few commitments after work and then have been working out of town on a house to get ready to sell every weekend for the past three weeks and then going out of town this weekend too. I’m struggling with easy simple things to eat since I don’t have much time to shop or cook. I’ve never enjoyed cooking anyway and so it’s a real struggle.

Does anyone have suggestions for super simple things to eat on keto?

OK I have an 0800-1700 desk job and am crazy busy outside of work too, with loads of animal welfare / wildlife commitments as well as gym yoga etc… It’s all about prep. Some of the things I do…

  • I make big salads with dressings & some sort of protein
  • I make a fatty protein shake with homemade almond milk, whey or whole egg powder, olive oil and / or avocado oil, green powder, and sometimes medicinal mushroom complex just because I feel like it - flavourings vary depending on mood
  • Cook bratwurst by the pack full and have a couple each day
  • Boiled eggs!
  • Chunks of cheese too, though not at the moment as I’ve cut it from my diet
  • I pre-cook meals and bring them into work in a food flask as there’s no food warming facilities here
  • Pre-cooked chicken thighs are good too!
  • Nuts as snacks, or pork scratchings - sometimes a small tub of peanut butter but I have to do this in moderation

It gets easier in time as you get used to it

Olives. I get Mario’s brand olives in little snack pack sizes. They partner wonderfully with a bit of cheese. Makes for a satisfying lunch. Easy to pack, especially if you get the individually wrapped cheese sticks or Baby Bel rounds.

Almond butter on celery sticks. Or peanut butter, if you prefer. On both these products you have to check the label carefully to avoid added sugar.

Tuna, or any canned fish you prefer. Perhaps with a bit of mayo and/or mustard. Also good with celery sticks or wrapped in a lettuce leaf.

My go to easy foods are tuna salad, hard boiled eggs, cheese sticks wrapped in salami, olives, bacon ( I just cook it by the lb or 2 and keep them in the fridge) salads with lots of fat, pulled meat ( slow cook all day one day when your home pull it and portion it out for future meals. I keep pulled pork, chicken, and beef frozen and always have a meat if I don’t have time to cook protein. If you have a few minutes to cook asparagus green beans or broccoli, throw them in a saute pan with butter and olive oil season to taste and they are ready in just a few min.

Vienna Sausages
Spam
Bacon
Italian Sausages (ironically, the “sweet” ones have less sugar than others!)
Heavy Whipping Cream (blended with jus a bit of sugar-free jello pudding MMM MMM MM!!!)
Cheese, cheese, and more cheese!
Celery
Spinach
Hot dogs
Lunchmeat
Coconut oil & Olive oil (small jars that I keep with me for a spoonful now and again)
Tuna in oil
Bacon Jerky
…There’s more, but you get the gist. Just lots of things you can portion out on Sunday night and just grab a variety of baggies every day for lunch or whatever

I pour coconut oil into silicone molds, also make fat bombs this way so they are easy to measure and take with.
I can pop one in my water at work on those days I don’t get a break.

I have my KETO cooler which I keep salt, boulion cubes, beef broth ice cubes if needed for a fast, a ready package pork rhinds and a can of sardines at all times as well as mio .

I like wholly guacamole cups use those with string or cheese sticks. A spinach salad with hot sauce and mayo or EVO and a splash of balsamic. Salami, pickles, HWC/coconut milk/almond milk shakes.

Mcdonalds ala carte 1/4 patty when in a pinch and really hungry, my local one wraps it in lettuce for me, and its cheap. Five guys burgers is a favorite when I need to eat out(they offer a no bun option), we also have Culvers which fries there burgers in butter just toss the bun…
I have a smoker so I like to make a meal on Saturday and eat it the rest of the week often things like ribs, or a chuck roast. A insta pot or slow cooker can do that as well among st other forms of slow cooking.

I know a lot of folks disapprove of manufactured food products, but I keep a stock of Atkins protein shakes in the fridge for when I absolutely have to grab and go. I keto-fy it by drinking a big gulp, then pour in a slug of HWC and shake it up.

Tonight I’m just making chicken breast with some sliced up grape tomatoes and steamed green beans. With lots of salt! It’s super quick to make and eat! It my go to when I really don’t feel like cooking but have to because we have hungry growing kids. Also salads are really fast and I also love love love zucchini boat pizzas :yum: all are eat and fast to make.
