Easy Chocolate Peanut Butter Fat Bombs
I used this recipe from the High Fat High Fun YouTube channel as inspiration: https://youtu.be/I8J6JRXKFjM
I ended up adding more cocoa powder and some melted chocolate along with more sweetener than Aaron used. You may want to adjust the sweetener up or down to your own taste.
Ingredients
1 cup coconut oil (melted)
You can substitute part or all of the coconut oil with melted butter.
1 cup peanut butter (melted)
2 TBSP cocoa powder
2 oz 100% chocolate bar (melted, optional)
2 -3 TBPS Swerve (confectioners)
5 -10 drops liquid sucralose drops
Directions
Add the coconut oil to a glass, microwaveable measuring cup. Melt the coconut oil in the microwave in 30 to 60 second increments.
Warm the peanut butter in the microwave and add 1 cup to the measuring cup. Keep warming the mixture in the glass measuring cup (in 30 second increments) until they are melted enough to blend easily.
Add cocoa powder, Swerve and liquid sucralose to cup. Use a stick blender and blend until thoroughly mixed.
Add the melted 100% chocolate bar, if using. Use the higher quantities of sweetener, if using the additional chocolate. Blend together using the stick blender.
Place a silicone mold on a tray or small cookie sheet. Fill each “cup” with the chocolate/peanut butter mixture. Add chopped nuts, shredded coconut (unsweetened) or crushed pork rinds, etc. to some of the “cups”, if desired.
Place in the fridge or freezer until set. Remove the disks from the mold and put in an airtight container or ziplock bag. Store in the fridge or freezer.
These will melt really easily and are soft enough to easily bite into right out of the freezer.
