Does cheese stabilize blood sugar?

Article claiming eating cheese with pure glucose will halve the rise in blood sugar.

It says this claim was published in a journal in 2002. I don’t remember hearing this before. I have a type 2 diabetic co-worker who was told to eat a piece of cheese if he happened to eat something like an apple to mitigate the effect on his blood sugar. Does anyone have a link to a paper on this? I’d like to understand the mechanism behind it.

Well, there’s this article from 2015 describing a small study (n=8) of Type II diabetics who were given either water or some Parmesan cheese and an egg before a large dose of glucose. The abstract makes no mention of any mechanism.

just throwing a thought in here… it might have to do with the fat in the cheese?

Consuming fat with glucose does lower the spike as I recall, but it also will prolong the time your BG/insulin spike needs to get back down again…

So depending on your goals (not killing yourself with bloodsugar spikes) it might help a little when you have an occasional treat, but if the goal is weight loss I wouldn’t recommend this on a regular basis?
Also if you are T2 a n=1 might be required…

I have heard the same especially for Type 1’s who say that fat will extend the period of the blood sugar elevation but flattens out the peak a bit. Its known as the “pizza effect” and causes a lot of problems for people taking exogenous insulin. As it makes calculating the correct dose for meals heavy in carbs and fat very difficult.

Great information. Sounds like it’s true but I’m still going to keep digging for a paper that explains what’s actually happening on a biological level to cause this. Very interesting.

Eating fats with carbs will slow down the conversion of glucose. Fung has some info on his site about this, and the first time I heard of it was back in the '90s,

I eat pizza several times a month, just like the chicken and mozzarella crusts better than gluten based ones. They are delicious and ketofied. I am a member of the pizza club for sure.

A very well meaning neighbor dropped off a pizza as a moving present for my wife and I. I’ve been Keto 5 months now after a T2 diagnosis. Unable to resist I ate a bunch, much to my dismay. 3 hrs after my bg was a whopping 189. It may have still been rising but I needed to turn in as I couldn’t keep my eyes open. BG was down to 135 this morning but I wasn’t knocked out of Ketosis.

I knew going in this was a bad move on my part and the numbers don’t lie. Well, on to a fasting weekend.:confused:

Next time you run into a standard pizza just eat all the yummy toppings off it and toss the carbage crust into the bin. Problem solved.
