I almost always drink water at least 15-20 minutes after I am done eating. I’ve read articles that suggest drinking during a meal dilutes enzymes and gastric acids, but I’ve also read articles that say it doesn’t. I honestly am not bothered if the former or latter is true. I just don’t want a false sense of feeling full because of a bunch of water in my stomach.

TLDR: the body reacts/adjusts accordingly to whether or not you take water with your meal and it doesn’t really make it more difficult or easier… Unless your wife overcooked the roast so badly that it hangs in your throat when you try to swallow it. Then it could be a lifesaver.
