DIY Sous vide gadget temperature controlling fluctauations

Hi guys. So I grabbed my brewing fridge temperature controller and hooked it up to my slow cooker to try out sous vide cooking. Everything seems to be going well except there is some constant overshooting due to the nature of the crock pot / heating element. So it fluctuates around +/- 3 degrees F
Will this be extremely bad for my cooking? Any advice is appreciated!

it’ll be fine for long cooks of beef, but it’ll probably be too finicky for eggs where you want to get as close to 68.2C as you can.

Hey @richard do you boil yours for 3 mins then ice them before the slow cook at 62.8°C?

Yes I do now I learned that trick to set the whites.

Thanks Richard. I did a 2kg blade from Woolworths for 48hrs. Wow! It was amazing!!! Even the little boys munched it all up.

I can’t wait to do the next cut.

There was a small amount of fat around one end which was still a bit Chewy. If I cooked it longer would it break the fat down to soft liquid goo?
