Here’s a KFC coleslaw copycat recipe that I adapted for a ketogenic diet
Ingredients
1 lb coleslaw mix
(OR 1 lb green cabbage, thinly shredded)
1/2 c heavy cream
1/4 c white vinegar
(or 1/4 c lemon juice)
(or a combination of both to equal 1/4 cup)
1/2 tsp celery seed
1/2 tsp sea salt
1/2 tsp onion powder
1/4 tsp ground pepper
1/4 tsp ground mustard
1/2 c mayonnaise
Splenda, 1 packet (or equivalent sweetener of choice)
Directions
Add the vinegar (and/or lemon juice) to the heavy cream and let sit for 5 minutes.
Add the heavy cream mixture to the bottom of a medium sized bowl. Add the mayonnaise and all the spices and seasonings to the heavy cream mixture. Whisk until thoroughly combined. Add the coleslaw mix (or shredded cabbage) to the bowl with the dressing. Mix until all the dressing is thoroughly combined with the cabbage/coleslaw.
Note: I often add 1 1/2 packages of coleslaw mix to the dressing, as there is plenty.
I also use lemon juice if I have it.
