Diabetes high and low blood sugars explained

Morning guys:

I am not sure how to ask what I got in my head. I am an EMT and I see diabetic emergencies quite often. I am looking for an explanation of why the body does what it does in both high and low blood sugar events.

Type one is a broken pancreas, but what about type 2?

Obviously the body is out of balance for these people, but can u show me the science, explain why the low blood sugar occurs and why these people can’t switch to burning fat?
Or the high blood sugar that is resistant to drop even though eating Keto and intermittent fasting. My wife has this problem

It just seems it should be so easy to switch to fat burning when you eat proper.

The body releases insulin to command the body to consume the glucose and when the insulin drops it switches to the fat.

People with insulin resistance will release much more insulin for a given amount of glucose and the high insulin levels will not allow them to switch to burning fat.

Full blown diabetes the beta cells lose some of the ability to produce insulin and with less insulin the glucose levels skyrocket.
