It’s a big learning curve. Don’t stress, you’re not likely to make that mistake again.
Oh man I remember the anxiety of the early days. While perfectionism can be an asset most times, I learned the body really doesn’t give awards for it. Just keep in mind: “You will be OK.”
While the majority of us try to keep to under 20g of carbs within the day, it’s just a goal. The reality is we can’t really set that number for you, since we don’t know your metabolism (or even our OWN to that level) or the precise amount that will halt ketosis for you. My opinion is 14g of starch in imitation crab meat is a treat and barely a blip to your body.
Have fun with it and don’t beat yourself up! I always get a serving of the crab meat when I go to the buffet.

Potatoes have going for them that they’re pretty much glucose, so the blood sugar impact is at least pretty honest compared to table sugar, where the fructose’s effect on insulin is not very obvious.
That’s not terribly bad, even for a perfectionist. 
No need to ever panic, there will definitely be days you can’t entirely control what you eat or how much. Don’t obsess too much about exact carb amounts, and once you are adapted your body may be able to handle more carbs occasionally without setting you back.
You absolutely can do this. One day at a time, one meal at a time. KCKO!
You’re doing great and the stress of the ‘panic’ will do more to kick you out of ketosis than the crab meat. This is a way of living more than a crash diet so occasional booboos will just be a learning experience rather than a major catastrophe. Best of health - KCKO. Xx

You’ll be fine. You caught it right away and will not do this again. KCKO. I am pretty careful about what I eat and after several months I noticed something I was eating had more carbs than I thought… You’ll be fine. There’s no reason to be perfect. Keep at it and you’ll continually improve as you progress. It’s a lifestyle not a 2 week fad diet…
Yep, I love bread too. If you MUST have a LITTLE bread, do it every OTHER weekend maybe. That goes for any carbs. You need to see some progress before you have a small speed-bump. Are you trying to drop some weight?
And ask yourself this: do you eat bread plain? Or do you put butter on it? Cause maybe it’s really the butter you want.
I hadn’t thought about that… I like rolls, with butter all over them 
So maybe it is just the butter haha.
So get a nice slice of high-fat cheese, and slather it with butter, in place of the roll. Yummy! You can also put butter on your hamburger, steak, pork chop, or chicken thigh (with skin left on!) if you can’t get enough. I have to be pretty hungry to want plain butter all by itself, but it really enhances the flavor of everything you put it on.
Speaking of which, I wonder how much butter it would take to “ketofy” a slice of that fruitcake that my dad has put out in the kitchen. Hmmmm . . . .
