Cheddar cheese! Oven to 400f. Drop tablespoons of grated cheese on a baking sheet (parchment paper or silicone) I added a heavy sprinkle of parmesan before baking till they melt and get all bubbly. They get crispy when cool.

Agree. The only cheese I’ll overeat (by itself) is cheese made this way.
