I agreed to drive my daughter and some of her classmates to a high school drama festival over the weekend. I packed some survival foods but as I wasn’t assured of a fridge or microwave there was a limit to what I could bring. Mostly nuts and cheese crisps, coconut cream for coffee and my “not oatmeal” blend for breakfasts. The first day was tough. I ended up with hamburger patties and lettuce for two meals.
I ate my cheese crisps for lunch the next day and was starving by the time we got to the Italian restaurant where our group had dinner. I’d studied the menu and they had chicken piccata without breading or coating. I was dying for some veggies at that point and they subbed veggies for my pasta side and gave me REAL butter. The portions were “YUGE” but I ate everything but the garnish. My fellow parent chaperones made much of being too full and taking boxes of half their meals, but they had croutons on their salads, large hunks of cheesey garlic bread and pasta with their entrees. As my husband says “they filled up in the cheap stuff”–LOL!
They also offered me snacks throughout the weekend–candy, GS cookies, etc and every time I refused the profferer would say (while biting into the treat) " I really shouldn’t either. My doctor says I’m pre-diabetic". Lol, I lost 1 pound over the weekend.
Btw, I was able to take the kids to Whole Foods for lunch yesterday (hot bar and salad bar) and they all loved it, eating real food! The rest of the weekend they seemed to only eat French fries or pasta.
But this is an NSV thread, so my NSV: I followed the kids up and down stairs and hills as we traversed the college campus site. No shortness of breath, pain, or fatigue. When I started this journey I couldn’t walk across the room without severe pain and shortness of breath. I didn’t have to stop and use my inhaler once. My kids won a gold medal for their one act play but I feel like I won a gold, too!
