Craving tomato sauce and melted cheese

I want tomato sauce and melted cheese on something! On Friday nights the routine is that my husband goes out to get us dinner to go from the restaurant of my choice, and we stay in and watch a movie with dinner.

Tonight I am really craving something cheesy and saucy. I thought about a gluten free pizza but depending on how they make their crust, it’s probably high in carbs. Chicken parm is breaded. Eggplant parm is breaded. Any suggestions what I could order that gives me the sauce and cheese without ingesting too many extra carbs? I’m even good with not eating bread with it but I want italian tonight!

Suggestions?

Antipasto? Maybe just a big chef’s salad and then eat your pizza - with a fork: leave the dough on the plate and have some yummy bites of cheese and sauce.

Thanks, Karen. Never been a fan of antipasto, and as much as I’d love a salad, raw greens aggravate my colitis.

Pizza topping without the crust is a strong possibility, but wow is that going to be tough to do…I love the thick crust pizza!

:frowning: I know. Maybe it would help to pile up the toppings so at least you have more stuff to eat? Pepperoni? Mushrooms? Olives?

I have to wonder how horrible it would be to have the chicken parm or eggplant parm… I have no idea how much “breading” restaurants use when preparing these but maybe if I get the chicken parm I could scrape off the breadcrumbs?

Maybe you could ask them to use a grilled chicken breast rather than a fried cutlet?

My quick microwave pizza hacks:

Microwaved Crust-less Pizza

  • Put a layer of provolone on a Dixie paper plate
  • Sprinkle smoked paprika and Italian seasoning
  • Spread some Rao’s marinara sauce
  • Add some diced onions and mushrooms
  • Add a layer of pizza pepperoni
  • Cover with the shredded Italian cheese, maybe a touch of the shredded sharp cheddar cheese
  • In the microwave for 2:30

Microwaved sausage patty meatza

  • Thaw out one or more frozen sausage patties in the microwave
  • Add Rao’s marinara sauce, diced onions, and/or mushrooms
  • Cover with shredded Italian blend cheese or Mozzarella cheese
  • Microwave for a minute or so, depending on how many you made

Microwaved Italian meats meatza

  • Slice of provolone cheese
  • Deli slice of salami
  • Slice of Colby Jack cheese
  • Deli slice of salami
  • Slice of Pepper Jack Cheese
  • Roma tomato Slices, maybe some diced onions
  • Deli slice of pepperoni
  • Slice of provolone cheese
  • Microwave for about 90 seconds.
  • Slice into four small pizza triangles

So, I just ordered a large Combo pizza from Minsky’s. They are the only pizza place that I know of that still puts ample cheese and other ingredients on their pizzas. I scrape the toppings off two pieces and am quite satisfied. Mmmm delicious! Can’t wait til it gets here!

I have yet to make Fathead pizza! Perhaps it’s time to do it so that the next time this craving hits, I’ll have a go-to that I’m good at. :slight_smile:

It’s easy. The toughest part is mixing the dough, which I do by hand. Other than that, it’s tough to screw up

If you get a low carb pasta sauce (such as Rao’s), you could use a little of it on some shitaki (Zero noodle, etc), along with some parmesan cheese for a very low carb craving fix.

Also a good thing if you can find the really big silicone ice cube trays that hold about 1/4 cup per cube - then you have small portion ready in the freezer - just warm it up. (you could make mozzarella sticks with breading made out of pork rinds).

Edit: Oh - and all pizzeria crusts that are made of dough are high in carbs - gluten free just means they’re not made with wheat flour - they usually use rice flour instead (just as carb-y). The only exception I heard of was someone mentioned a pizzeria that the crust was made out of meat? (that would almost be worth a plane ticket) :wink: Haven’t heard of any pizzeria’s embracing a keto-friendly dough yet.
