Canned Sardines and Anchovies usually come in Olive Oil.
It is advised that Olive Oil, when heated actually is bad for you because of oxidative stress, free radicals and inflammation.
Hence my concern.
I really dig those anchovies in olive oil from Whole Foods, but I’m concerned about possible inflammation.

Do you feel bad eating them? I would advise you to worry about the healthy choices your making only when you feel a problem and want to trouble shot. These are foods that have many benefits and are probably a great choice.

I have not noticed any inflammation issues from any fish canned in olive oil, I don’t think they take the temps during processing up to levels where it would break down the oilve oil (350F).

If you have been eating them and no issues, then enjoy.

I found out on Youtube about this process.

  1. Steam the fish in the can (without the lid)
  2. Add oil
  3. Seal the lid

So I guess, no need to worry about the oil getting heated.
On another note, Dr. Berg had someone test Omega 3 content of Canned Sardines to find out if the canning process destroyed the beneficial fatty acids. The test results concluded that a great amount of Omega 3 were available in the canned sardines.

The soy oil would not be a good thing to be eating. If they do the same with the olive oil, no worries.

If you’re particularly worried, then you can get fish simply canned in brine.

On a different note, how do you notice inflammation?
I thought inflammation happens at a cellular and molecular level. Is it very easy to find out when we get inflamed?
I’ve eaten rice and vegetable oil most of my life and was never able to notice any signs of inflammation.

My joints “freeze up” on me, that is why I know to keep a wide distance from things like gluten. I get to the point I can barely manage to type. I also get constipated badly. It manifests in various way for different people.
