Costco’s prime brisket is the best! I cut them into 3 pieces, vac pack and sous vide 155 degrees for 24 hours. Firm up bark on BBQ. It can’t be beat for the lazy way. The fat breaks down and becomes gelatinous gold. Use the juices in a heavy cream gravy too. IMG_2050

Sadly, not on sale down here in ATL, they were $5.99 today. Not low enough to buy, I’ll keep looking though

Sam’s Club also carries whole prime brisket for $3.38/lb

I bought the last one from my Costco. 13.7lbs @$3.49. I separated the point from the flat, and trimmed all the fat - was 5lbs of fat. So 9:5 meat to fat. So $5.50/# for the trimmed brisket. Bonus - I got tallow and beef cracklings out of the trimmings :+1:

Sounds like what you saw was the brisket flat only.

3.29 not necessarily good or bad. not long ago they were under $3, peak summer upper 3’s
