Hello all! New to Keto, and wondering if cooking veggies ups it’s sugars? Example: braised cabbage (turns brown and sweet).

Caramelized onions do but I don’t think it’s that bad unless you plan on eating a whole bowl.
I wouldn’t worry about the other cruciferous veggies or any other greens.

Cooking doesn’t add more sugars, it just converts some of the starch in the vegetable into sugars. Your body would have done the same - converted the starch into simple sugars. So although the veg tastes sweeter the carb count (sugars + starches) stays the same. GI would probably go up though.
