Confused, keto pizza

Once a week I like to make a cauliflower pizza. I use 500g of cauliflower as a crust, but after steaming and draining the water I only end up with 200g of cauliflower! So how much cauliflower am I actually eating?

Sorry for the silly question

I go by raw weight.

what @anon54735292 said. 500g is your measurement in order to accurately capture nutrition info.

Think of it this way. If you want the nutrition information on any vegetable, and most of them are mostly water, use the raw vegetable information. If you were to use the 200 g of cauliflower hydrated it’s actually 500 g. Your macro calculator or nutrition chart for 200 g is much lower than 500 g, and technically you are eating the 500 g with the water removed
