I wasn’t clear about that, either, but it sounds like it’s one of those things that’s good in small quantities, but that it might be easy to overdo, and have the carbs mount up. (I’ve never had it, but from the description, it sounds a lot like that. I’m the kind of person who probably would overdo it…).
I love it. You can only try it and see I guess. It’s pretty rich so I only have a few bites and I’m good. Toast the coconut in the oven. Don’t turn your back on it for long, it toasts fast! Then in the food processor for 10-12 minutes. I put it into small jars, like the 4 oz canning jars, so I can take it to work.
this stuff is the best! i make my “keto chocolate bar” with it (along with cocoa powder, and coconut oil to up the fat) and it’s delish!
as for how good it is for you (on keto), i really don’t know? but hey, we gotta live sometimes right?
It has a naturally sweet flavor; since I’m avoiding artificial sweeteners, Coconut Butter is a good choice for me…though I wonder if it has the same insulin response of sweeteners because of the sweet taste?
same boat here. i don’t use any sweeteners but i think keeping some natural yet subtle sweet tastes in my diet keeps me sane since oh boy, do i miss the fruits.
not sure on the insulin response, but i usually have it at the end of the meal, if i want to up the fat, or i am just feeling it - cannot be too bad right? i mean the incremental insulin. just making sure i am not snacking on them between meals which had happened when i first get to know this stuff - just too delicious!
I’m with you. I could actually kill someone for a ripe banana. Maybe not KILL, but like…definitely push someone down the stairs or trip them in a parking lot.
How much coconut butter is too much? Easy to eat! Lots! Any drawbacks? Any experience, Ketonians? Thanks!
I think you’ll know if you listen to your body at all. It’s purely fat and fiber. It’s very rich, I can only eat so much. If you regularly eat well beyond your satiety signals, then you should choose a serving size like a tablespoon as your limit.
Thank you for the note. I appreciate the reminder that satiety is a personal matter and an important indication of the proper amount of nutrition for our body. So far, I haven’t found a “too much” serving although the over consumption of coconut butter may be obscuring the need for protein.

Hey thought I’d revive this rather than start a new thread, I really have just one q, and I realize answers would be v subjective but just generally speaking, how “sweet” is this? Coconut right form the shell is pretty bland, not sweet at all, so am guessing this will taste similar, or sweeter due to its being so highly “concentrated”?
I’m asking because I use no sweeteners at all, haven’t had chocolate since starting keto (2017) nor desserts and am not a dessert eater really but ran across this stuff mentioned (had never heard of it and it sounds divine) and the idea of spreading it on a square of baker’s chocolate is somehow appealing. Would the two together, not modified by adding anything else nor sweeteners, be way bitter?
I’m on just meat/eggs/butter now but when I get to goal weight (am 116, goal is 110) I want to add stuff just once weekly, like cheese and fun stuff like this.
I found it nicely subtly sweet, some foods taste ridiculously sweet to me now like marscapone cheese, this is much milder. Interestingly, when I melted and mixed with 100% unsweetened bakers chocolate, it took enough of the bitter bite off that I never added anything to try to sweeten it.
Oh heckyeah that was eactly the answer I was hoping for!
I was thinking I could just spread it on the chocolate but maybe I can melt it together in a saucepan, then cool it spread out on a baking sheet and break off pieces after chilling it to harden.
(again none of this til goal weight- repeating this due to ocd )
