Coconut Butter - Accidental Discovery

So, I was trying to make some whipped cream with Swerve, and MCT oil and ended up with something like butter (in it’s consistency). It was yummy!

1C Heavy Cream
1tbsp Swerve
2tbsp MCT oil

There was some separation, but not much. I didn’t measure it before I dumped the liquid.
