Dark Cocoa Roast Almonds- keto adapted

Ingredients:
2 cups raw whole almonds
2 - 4 tsp coconut oil, melted

4 Tbs cocoa powder (I used Valrhona cocoa as per Carrie Brown’s recommendation in her Ice Cream cookbook)
2 Tbs powdered Swerve
1/2 Tbs Sukrin Gold
1/2 tsp salt (could have used a bit more)
1 tsp cinnamon (or espresso powder) - optional
(I used cinnamon, but couldn’t taste it at all, I’d double this to 2 tsp next time).

Preheat oven to 350F.

Spread the nuts in an even layer on a baking sheet. Drizzle a small amount of the melted coconut oil over the nuts and toss to coat evenly. Use as little oil as possible, starting with just a teaspoon or two.

Place in oven and roast for 5 minutes.

Remove after 5 minutes and stir thoroughly. Return to the oven.

Check the nuts again after 3 minutes. You are looking for the color to be a few shades darker. They should start to smell nutty and you might hear them crackling. Return to the oven if needed and check again after another 3 minutes. If they need longer, give another stir. Nuts rarely take longer than 15 minutes to roast, usually closer to 8 to 12 minutes.

Remove from the oven and cool. When the nuts are browned and smell nutty, remove from the oven and immediately transfer onto a plate or another baking sheet. Do not cool the nuts on the tray they were baked on or you will risk scorching them.

While the almonds are roasting, sift or mix the cocoa powder, powdered Swerve, Sukrin Gold, salt, and cinnamon or espresso powder (if using) together in a gallon ziploc baggie.

Put the coating mixture in a bowl and toss the hot almonds with the coating immediately after removing from the oven. Let the coated almonds cool in the bowl. Once they are cool, toss the nuts in a strainer to dislodge any extra coating. Store in a airtight container.

Oooohhhhh. I’m not the biggest fan of almonds but I’ll definitely try this with macadamia nuts!
