Yesterday while I was cashiering for part of my shift this went by. Two women were at my till, the thinner and older apparently the mother of the somewhat heavier younger. As I put the Chicharons into a bag I casually asked if someone was doing keto and the older woman said, “She is. Someone told her to get these for snacking”. I said when I started keto I spent about 3 months trying unsuccessfully to like pork rinds but finally gave up. I recommended real bacon bits instead if the pork rinds didn’t work out. The older asked me how keto had worked for me and if I was still doing it. I simply stretched out my arms and said, “Very well and I will continue to eat like this for the rest of my life”.

Overall, a very pleasant close encounter. :grin:

PS: I also recommend ketogenicforums.com to them. So maybe she will show up here.

Ugh same here. I really wanted to like them. Tried different ones; just can’t do it. Maybe if someone made me fresh ones. But the bagged ones always kind of just taste like pungent, stale oil.

That is great, always cool meeting other Keto people, I hope that young lady has great Keto success as well =). I have never tried Pork Rinds yet, I guess I figured I have enough choices of foods to eat when I do eat already, and don’t want to tempt fate by having snacking Keto stuff around.

I have found a nice one, they are all puffy and big enough to dip!: but most of them would break a tooth and I had an unsuccessful go at making my own!
I was at a restaurant the other day, and ordered "jerk chicken and salad, no rice please ". The waiter said “would you like fries instead”? I said “no, no carbs” and smiled. He said “ahh keto”? We had a few moments of keto talk and I got a big bit of chicken!:blush: nice

I use pork rinds for recipes, but not for eating by themselves.

I like em’ as replacements for tortilla chips in nachos, with fresh sliced jalapeños, black olives, gooey cheddar, sour cream and super hot sauce. Awesome microwave meal that’s still real food when I just can’t be bothered. Yummo.

Myself, I love pork rinds. The best are this brand:

They are much tastier than the processed snack brands. In my area, the only supermarket that carries them is Shop-Rite (the Stop ‘n’ Shop manager must be a vegan, because he flatly refuses to stock pork rinds of any kind). But a quick Goolge search shows a number of stores that carry these.

I used to like them but now they just taste bland and dry so I just use them for making my chicken fingers and chicken thighs. It’s cheaper than Pork Panko.

You guys are killing me, and here’s why… I freaking love pork rinds, but missing too many molars, and so they end up tearing my gums up :frowning:

Oh but I will say this… The typical hot and spicy ones use Red chilli pepper, which I’m allergic to, and the plain ones are just too freaking plain. The much harder find BBQ ones are the bomb. I used to buy the plain ones, and then sprinkle my own BBQ powder on them… When I couldn’t find the store bought BBQ ones…

I had a most pleasant encounter yesterday while at work. A friend of mine- that I had not seen for about 5 months stopped me in the store, and was gobsmacked. She wasn’t sure it was me, at first. So, she inquired about what happened to the rest of me. I told her that I made the decision not to end up like my brother, and that was it. (She knew about my brother’s death, etc.) She continued to inquire about how to adopt a Keto WOE. We ended up tentatively having a coffee day soon, and talk more about it.
So happy I ran into her!!!

I’ve been buying baked pork rinds:

I buy them locally, not from Amazon, though. I still only use them for recipes.

I’d like to post about close encounters of the pleasant kind, but haven’t had any of those. Our nephew came over, we had steak, which he ate, but he cut off all the fat. I did not ask him why, as at the time we also had a vegetarian at the table and others too. Of course, he ate the dessert the others had brought (I had 85% chocolate, apparently from Aldis, which tasted really sugary to me).

The best I’ve found in my area is the giant plastic container that can be found at Sam’s — they have consistently delicious & stay fresh for weeks if the lid is on tightly.

Here’s a great use for pork rinds though; use them as coating for things like fish or chicken fingers instead of bread crumbs. I love white fish, haddock, cod, etc. and I do this: Dredge the fish through beaten, spiced egg, then through coconut flour, back through the egg, then through crushed pork rinds. Fry stovetop in a hot, butter loaded pan (it really soaks up the butter so I do use lots), squeeze of lemon over top, et voila! soooo yummy.

What can you tolerate in your diet.

Here are some GREAT Tips for enjoying Pork Rinds.
First the Dollar Tree sells them for $1/bag. Best deal in town.
We save the hard ones in a bag and grind up with other ones for PANKO in a blender.

Second, to fix the flavor, pour some into a ziplok bag, and add some Parmesan Cheese.
Shake well, and try them. AWESOME (I cannot tolerate the cheese). There is a moisture release, so don’t do this in advance. The parmesan softens the pork rinds.

I have done this with BBQ seasoning. With packs of powdered cheese from Kraft boxes of Macaroni we could not return to the store. That comes out good. Be careful for Maltose/Dextrose in these powders, or make your own.

BBQ Seasoning, and garlic powder + onion powder sprinkled on is Good. Just shake it around. Totally changes the flavor. Get creative, SHARE your best solution.

I actually use a coffee grinder, and powderize NoSalt and Magnesium and Salt. And will sprinkle that on top. (I can’t do the seasonings, as I react).

Finally, I make Faux Cheese Fries with them.
Throw them on aluminum Foil, cover with shredded cheese and bacon bits. Throw in your toaster oven/broiler to melt that cheese.

Take it out and eat it immediately! Again, after the moisture transfer, if these get cold, they will taste stale. Ruins the effect. But warm… OMG the closest thing to cheese fries you will get while being keto!
