For when you just need a chocolate fix:
In a mug melt 1 tablespoon coconut oil. Add:
Egg, 1
Sour cream, 1 tablespoon
Baking powder, 1/2 teaspoon
Salt, pinch
Coconut flour, 1 tablespoon
Coconut unsweetened, 1 tablespoon
Unsweetened chocolate chips( I use Lucy’s) or cacao nibs, 1 tablespoon
Lakanto drinking chocolate, 1serving (I do heaping tablespoon)
Mix well in mug. Microwave for about 2 minutes, until springy in the center. Use a knife around edge to loosen. I then cut into about 5 “bisquits” which I top with 2 tablespoons whipped cream from can, divided.
This is not low calorie. According to Cronometer.com with nibs and minus whipped cream : 366.8 calories, 10g protein, 5.6g carbs, 30.1 g fat.
What it is is very satisfying for an occasional treat.
