Choco-Doodle-Do’s
1/3 cup (66g) coconut oil (not liquid)
4 ozs (30 g) 100% cocoa unsweetened chocolate
3 Tbls (45 g) sugar free maple syrup
1 teas (5 g) vanilla
1 1/2 cups (360 g) nut butter
1/4 cup (40 g) flax meal or chia seed
4 cups mixer (coconut flakes, sliced almonds or combination)

In a pan over low heat or in a double boiler, melt coconut oil and chocolate. Add maple syrup & vanilla, mix well. Remove from heat & stir in nut butter. Stir in flax or chia, then gently stir in filler. Drop by spoonful on parchment paper. Chill about 40 minutes. Store in fridge.

Yesterday I had some down time and ventured into Natural Grocers in Eugene OR (there are several others around the state & US). Picked up some nut butters, then found out they were having a free chocolate class so I hung around. I really enjoyed the class and was quite impressed with the instructor ( Yaakov Levine NTP). As he went iver some of the other classes, one called 'How your body works or doesn’t- was described as

When I asked if this class was based on a ketogenic diet, he said, “No. We don’t concentrate on any one diet but encourage eating real nutrient dense foods.” Then he explained 'for those who don’t know what a ketogenic diet is…" I was thrilled to say the least! He even told us that saturated fat was good for us and it was sugar that was bad. Whoo hoooo…word is getting out!

He then talked about chocolate, the history, health benefits of dark chocolate and the importance of the brands of chocolate we buy.
Sustainable, Socially Responsible, and Ethical

Someone asked why they didn’t carry Ghirardelli chocolate. He said they were not up to Natural Grocers standards.

He showed us how we should enjoy chocolate - small piece on the tongue, not touching the teeth, not chewing it, just letting it slowly dissolve, Samples of 85% chocolate and 78% were passed around. He then gave us each a no bake cookie, much like the ‘No bake Ums’ but not made with oatmeal or peanut butter. The ingredients are totally keto!
