My Non-Keto Hubby told me today that he was going to phase out all of the Coke Zero Products in the house (which he has been buying in bulk…for ages) for the La Croix that I introduced about 2mos ago! I’m Ecstatic, and I count this a non-scale victory and don’t care what anyone else has to say about it. You would know if you had to live with a hard-headed person how difficult it is with food prefs. etc. My hubby is a hard nut to crack but in my mind it’s like the drip, drip, drip, drip, drip, drip of the water on the rock…that shit works…eventually! Oh Happy Day!
Chipping Away At An Alp!
This afternoon:
Hubs: I’m going to do blah blah blah in the server room.
Me: I’m going to make some Keto Buns. I’m grillin steaks for dinner and I want some bread.
Hubs: Keto Buns? You mean those brown ones?
Me: Yeah
Hubs: We like those.
Me “We” do?!
Hubs: Yeah, “We” do.
Me: Well, “We” can have one with dinner tonight!

Just got a sous vide machine yesterday and wanting to make us some tender juicy hamburgers. And a good bun would be awesome to go with.
I’ve been tweaking this a little… I make mine in a smallish convection oven and I bake for 65mins then let them cool in the oven after it turns off. This last batch I subbed out 1/4c. of almond flour with Oat Fiber to cut down on the carbs and for flavor/mouth feel. It turned out really nice. One thing that I do also is mix in the egg whites/ACV first to incorporate and I add the hot water slowly as the last step, then I pat them out like hamburgers.

I noticed psylium husk powder in the ingredients. I have psylium husks but not powder.
Have you ever tried to grind husks into powder?

I’ve read through the comments on a couple of different recipes where they called for powder and someone tried to grind their own husks, unsuccessfully. Glad to know it’s possible.
I don’t have a coffee grinder (should get one) but do have a blender, a large and small food processor, and a Vitamix that only works on two speeds anymore. Maybe one of those would do the job.
I’m sure a coffee grinder would also grind flax seeds, which would, I’m pretty sure, give a better flavor to things needing flax meal.
