Sounds nice! Yes, paleo and keto cakes always dry. I always put a grated carrot (you don’t notice it when cooked) in my cakes to add a bit of moisture.

I’ve eaten nearly 2 full low-carb cheesecakes in the last month and I’m still losing weight. Maybe not as fast, but I’m enjoying eating them, learning more about baking & cooking in general and still achieving my weight loss goals.

If I was stalling, then I’d have to say that I’d ditch the baking in an instant. I could live without it to get where I want to be.

That one is on my list to try too, though it’s in competition against @Brenda’s chocolate cake to get done next. It’s frustrating that when I’m fasting I have so few (self imposed) opportunities to eat!

Indulgence in occasional keto-friendly treats can be a stress reducer & help manage cortisol levels. Also, long-term compliance is the most important factor in successful weight loss, so being as flexible as possible without being unhealthy is useful. Don’t let puritans ketoshame you.

That said, I’m not a fan of Sukrin personally, I prefer Lakanto monk fruit/erythritol blend or allulose.

Do what works for you. I could not give 2 shits about anyone else’s take on what I eat or don’t eat. I was never a big sweets eater but if my friend makes a keto cake or sweet treat I am going to try it for sure. Why the hell not? I know that it will not make me “fall off the keto wagon”

Sukrin and xylitol are the only sugar subs I can find in my local health food shop. I use xylitol for tooth and gum health.

***Standard disclaimer that xylitol kills dogs so keep that in mind if you have a doggo.

I use erythritol (hardest word in the world to spell) and Just like Sugar which is chicory and monk fruit (I think)

I always get my erythritol from Amazon. Great prices there. Different seller every time because they constantly want to undercut each other. lol.

For me, xylitol is definitely the best all round one. Flavour, convenience, being like sugar, but with mutts in the house it just isn’t worth the risk.
