An article about restaurants offering cauliflower pizza crusts. But with the typical propaganda.

I guess carbs are okay according to this registered dietitian. Time to quit the low carb “fad” diet like Keto and go back to eating “healthier carbs.” .

On the other hand, cauliflower crust generally has more fat in it — about 2.5 times more fat, according to Shanks. When people add cheese and toppings such as pepperoni, the fat content rises even more.

Carbohydrates have a bad reputation, but eliminating all carbs from your diet is a bad idea, she said. Most people tend to eat refined carbs — the type found in junk foods —and excessive amounts of them. Whole grains, oats, quinoa and brown rice are healthier carbohydrate options. “

Maybe the extra fat is a problem for people who eat carbs. For those of us who run on fat, BRING IT ON!!! :smiley:

My only eyebrow raiser was something about rice flour in the cauliflower crust, at least as the article stated. Dunno. But glad to see that it’s becoming available in a more mainstream fashion.

Yeah I saw the rice flour part too. Don’t know how it can be low carb with that stuff

The dietitian quoted in that article should be ashamed of her ignorance.

Unfortunately, most of those making cauliflower pizza crusts are focusing on them as a “gluten free” alternative, not a “low carb” alternative. So they add starchy flours that have carbs, but no gluten. Rice flour seems to be a popular ingredient.

For example, California Pizza Kitchen was mentioned in the article – their original hand tossed crust has 122 net carbs, but their cauliflower crust still has 81 net carbs. Not much help if someone is trying to stay under 20 net carbs for the entire day.

That’s the problem. It’s not. Low carb is not the focus of most cauliflower crust pizzas. Gluten-free is. Just because something has cauliflower doesn’t make it low carb. Some of these companies either don’t know why cauliflower is a desired ingredient, or are purposely misleading us.

There’s a similar issue with items labeled “no sugar added” or “sugar free”. They can still be loaded with carb-heavy starches (e.g. cornstarch).

Nutritional information needs to be checked. :frowning:

But… if enough people want the cauliflower crust but don’t buy it, and they mention that they want low-carb, not just gluten free, they’ll be heard by some. It’s a step.

Was I pissed when we saw at Costco Cauliflower crust frozen pizzas and got five only to read the label before purchase and putting them back. Phhhblt. Besides i make a pretty kick ass chicken crust pizza!

People don’t like whole grains because most of the time they taste like cardboard. I’ve NEVER liked quinoa…

I had it once in a “healthy” meal years ago. But I can’t recall what it tasted like.
