I recall @carl describing a cauliflower mash receipe where he roasted the cauliflower before he blitzed it, but I can’t see it on the website

I do not have an exact recipe but basically I boil a head of cabbage for about 15 minutes or until soft and then strain excess water and put it in a food processor and add the following all done by site/taste:
Butter, probably three or 4 tablespoons
Maybe a quarter cup of heavy whipping cream
Half a cup of sour cream and about 1/4 to 1/2 block of cream cheese. Remember all of these measurements are imprecise and I cook by instinct and taste.
The key to my recipe is adding shredded horseradish cheddar cheese and a little shredded Parmesan or dried Parmesan along with fresh finally chopped chives .
Absolutely delicious
