You know how sometimes you really want to like something but you don’t? That’s me and cauliflower. I’m reaching out in hopes that someone has a trick to make cauliflower taste like not cauliflower. There’s so many great recipes and ideas I really want to take advantage of. Please help!!
Cauliflower help!
I swear by riced cauliflower. I just generally don’t like it as a whole, but ricing it and adding whatever seasonings I want, maybe some soy sauce, etc. makes it tolerable.
Specifically cauliflower rice? Have you tried making your own vs premade? I like the stuff I make a lot better. You can also make/buy broccoli rice, maybe you’d like that better? As for pizza crust, I make it with canned chicken and cheese now instead of using cauliflower.
Cheesy bacon cauliflower mash.
Boil cauliflower till tender. Drain and add back into pan on low heat. Add butter, liquid (heavy cream, half and half, or stock) till desired consistency. Salt, pepper, garlic powder, onion powder. Mash it up. Stir in grated cheese of your choice and bacon crumbles.
Mashed is the best. I use a bag of frozen and microwave for 3 minutes. Add 2 oz cream cheese and 1/4 cup of sour cream. Put it back in the microwave for 3 more minutes. Add whatever flavors you like, cheddar cheese, bacon, chipotle peppers, or whatever you like. Blend with an immersion blender until smooth. Let sit at least 15 minutes. If it cools pop it back in the microwave for 2 minutes.
Not specifically rice, but including rice. And not pizza crust, for that I use almond flour, egg, cream cheese and maybe something else but can’t remember. The Carlshead recipe.
I tried substituting it for mashed potatoes and no matter how much of the good stuff I added it still tasted like cauliflower to me.
I really like cauliflower! But the trick is to add stuff, if you don’t like the taste, to make it taste good. So butter, olive oil, cheese and also put your cooked meats over cauli mash and pour the juice / gravy over.
I love it as a source of comfort food, when I want to put my fork into something smooth, bland and comforting.
Also cauli mash is absolutely fabulous at thickening soup and I really don’t taste it in soup. On the other hand, I do eat it very often so possibly I no longer notice the taste any more.
But it’s not compulsory!-If you still don’t like it after all that then don’t eat it!

Maybe you and cauliflower should part ways, it’s not meant to be . Don’t worry, you’ll find your happiness with another one (zucchini, asparagus, cabbage, spinach…)
