Cauliflower Flour

I know it sounds like a “who’s on first” joke routine starting, but today in the store I noticed this for the first time. Kind of carb heavy as you would expect from dehydrated cauliflower but I thought it was interesting. Has anyone used this stuff? Definitely on the spendy side of things, it had a suggested retail of about $15 lb, it was on sale for $7.99. :scream:

I couldn’t find out much of anything about using it on the web, there are gluten free mix versions like Bisquick too.

You can’t see in the picture but it’s 12 net carbs for a 1/4 cup! I passed on the buy but thought it was interesting. :man_cook:t3:

Haven’t used the stuff but out of curiosity I googled cauliflower flour recipes and found this:

1. Cauliflower pizza crust

This pizza crust is blowing up on Pinterest and many food blogs. Tasty Kitchen blogger HowSweetEats says that she was skeptical too, at first, as she “didn’t love cauliflower at the time,” but she now raves about the veggie and swears by this recipe.

2. Cauliflower wraps

Lauren at Empowered Sustenance walks you through how to make these scrumptious flour-free, dairy-free and gluten-free wraps.

3. Chocolate cake

I know what you’re thinking: gross, right? Turns out it’s delicious. Check it out at Chocolate-Covered Katie.

4. Red Lentil Cauliflower Burger

Sick of all those bland veggie burgers out there? Try this recipe from blogger Vegan Richa. This burger comes stacked with onion rings, spicy mayo, roasted peppers and avocado. Need I say more?

5. Cauliflower Tortillas

This recipe from Slim Palate is simple to follow and the pictures are mouth-watering. They make you want a taco right now. She loaded hers up with grass-fed sour cream, onions, guacamole and more.

@CarlKeller All those recipes are using fresh cauliflower made into rice like every other “Cauliflower crust” recipe. This stuff had a pizza crust recipe with rice flour in it on the package, and what I found in a quick search was recipes with the baking mix version.

I hoped when I saw it that it was going to be like coconut flour where you only need a little because it’s about 3 net carbs per Tablespoon. So I don’t think it’s very suitable for keto now because it doesn’t expand like coconut flour from looking at what I did find. Has about half the carb content as white flour. :slightly_frowning_face:

I think a finer grade of cauliflower would work for those recipes. Getting the right amount might be a little trickier since I expect the actual flour might be a bit drier. But it does seems a bit expensive to be experimenting with… I would be very interested in knowing how the wraps and tortillas turned out.

I’ve noticed in the frozen organic section of my market there is a lot of new cauliflower products, like pizza, or tater tots… but everytime I look at the nutrition, they are pretty high carb.

@Diygurl19 It stands for gluten free all purpose mix. It is gluten free, but gluten free baking mixes contain stuff like;

Rice, quinoa, millet, amaranth, and other non wheat grain flours and grain starches like tapioca, potato, and corn.

That’s why gluten free baking mixes aren’t used for ketogenic cooking, these things are all high carb. So we’re using coconut flour or nut flours instead. :cowboy_hat_face:
