THE RECIPE:-Ingredients:* 1 full head of cauliflower (break into florets)* 2 Cups of Spinach* 1 Cup of Kale* 1/2 white onion, chopped* 1/2 garlic cloves, minced (or chopped)* 4 cups of bone broth or stock of choice* 1 cup of full fat coconut milk (or heavy whipping cream)* 1 1/2 tablespoons of MCT oil* 1 tablespoon of olive oil* Salt, cayenne, & garlic powder to taste -How to Make: 1) Chop onion & garlic cloves2) Heat 1 tablespoon of MCT oil + a splash of olive oil over a stovetop 3) Sauté onions & garlic cloves on medium high heat until lightly browned4) Add the cauliflower florets to the sauté pan with the onions & garlic, cook for about 6 minutes 5) Add two cups of spinach + 1 cup of kale to the pan, continue over medium to high heat & cook 3-5 minutes until all the greens are wilted nicely6) Add 4 cups of bone broth or stock (chicken, beef, veggie) of choice to the pan7) Bring to a low boil8) Transfer all to your Vitamix or high-powered blender; OR if you cooked everything in a large pot, you can use a hand mixer to blend everything9) Add 1 cup of full fat coconut milk or heavy whipping cream10) Add an extra handful of spinach - if you’re looking for extra greens!11) Add a squeeze (about a tablespoon) of MCT oil12) Blend on high for 2-3 minutes13) Now it’s seasoning time! Start with about 1 teaspoon of salt, 1/2 teaspoon of cayenne, and 1/2 a teaspoon of garlic powder… add more to taste! This is all about preference. This soup is such a great base for TONS of flavors… feel free to add any spices you like. We’ve added paprika, curry, nutmeg, chipotle powder, celery salt… play around and have fun!
