Carrots?

Are carrots allowed as long as I stay within my 20g of carbs a day? some places say its fine and some places say its not allowed…confusing

Carrots are fine, just don’t go crazy with them. A few sticks with something fatty like peanut butter or dressing is fine. Also chopping up a whole carrot to go in a stew is fine. Just be aware that they have some natural sugars so they are a more carb dense vegetable. If you’re really trying to jump start your keto and are on a stall it’s good to know where the extra carbs are so you can always cut out the carrots and onions for a little bit and then add them back when you’re comfortable.

My general rule of thumb is that if it grows below ground its a no go. If its leafy, green normally its ok but that is not always the case. I avoid peanut butter myself as it fairly high in sugar per serving and typically it is made with soy oil with the very common varieties.

There’s lots of natural peanut butters out there with one ingredient: peanuts. :slight_smile:
(downside is you have to keep them in the fridge once you open them) - and the oil tends to separate, so you have to mix it back together once it warms so it’s spreadable.

That is changing, and it’s great news. At the grocery stores I shop at, more than 50% of the peanut butters have only one or two ingredients: peanuts and salt. At the organic stores, 90% have peanuts and maybe salt.

peanuts are beans and its best to avoid them. they are inflammatory in nature and much more carbohydrate dense than true nuts (cashews as well). almonds, macadamias, pilli, walnut and pecans are better choices.

storing the jar upside down helps. and there are cool ‘stir lids’ available now too that you can keep screwed on and just crank a couple of times to stir it all up.

That said, I avoid the nut butters in general due to the density of carbs in even small amounts. Just fraught with peril for me.

You can make a stir lid from a mason jar lid and a mixing beater.

Garlic I do use hence general and not strict, not much in the way of onion bulbs I do eat purple ones if they come in a salad at a restaurant, I use green onions mostly.

Peanut butter in particular if used by itself and not diluted into something like a fat bomb for its given serving size is very dense in energy, I can easily eat 2 tablespoons with out trying on a piece of veggie. It was a habit i broke early on when I started to really read labels. I am slowly working down my last jar of skippy, I do put into fat bombs, which works out to something less than a .5g for my bombs. For me this and mayo were how I figured out soy oil is bad for my inflammation . I have small amounts, until I use them both up, I have an alternative for the mayo already, but peanut butter I may just go without. I cannot take peanut butter into my work anymore and when on my normal eating window I eat more than half the time at work.

A dough hook attachment on a hand mixer makes a fine tool for stirring natural peanut butter. :slight_smile:

As for carrots…

According to Mr. Google, 100g of carrots has 7.2g of carbs (net), if that gives some perspective. There are definitely a lot worse choices you could make. Just be mindful of how much you’re eating. And if you’re not opposed to eating something that comes from under the ground that will fit into your macros, they can work in moderation.

FWIW, I eat them on occasion. They’re good swimming in browned butter. :slight_smile:

250g of carrots? Is that a typical serving these days? Way too much for me. That didn’t actually even look appealing. But yeah, I agree, if you have to eat that many of them, they’re probably not a good choice for keto.

In another place where a keto carrot cake muffin was being talked about, that amount of carrots would have been divided into 30 servings.

There’s a trick to that. Lid on tight and store peanut butter upside down. Oils mix in better.

Just curious. What is this video showing? How can I do similar testing with different foods? What am I looking for?

Why do we want to mix the oil back into the peanut butter.

I am not sure but I thought it is more healthy if I toss the omega 6 ( The separated oil ) and add something else to correct omega 6 to omega 3 ratio.
