1 Carrot is 1.5 oz (46g) @ 3.5 total / 2.5 net carbs
1/2 cup or 3 oz (85g) @ 7 total / 5 net carbs
2 1/2 cups or 16 oz (453g) of carrots @ 37 total / 27 net carbs

I don’t go out of my way to get them or avoid them :open_mouth::stuck_out_tongue_winking_eye::wink:

FWIW, I do, too! It doesn’t happen that often. But it does happen on occasion. And when it does, I enjoy them. Were it getting to be a pretty often thing, then I’d worry. As it is, no guilt, no worries. It’s just life. :slight_smile:

I eat them once in awhile if I make frozen steamed veggies from the store. There usually isnt very many in the california blend plus I try to pick around them but I end up with a few slices. I also mix a small amount sometimes in a large soup. As long as you stay in YOUR range of carbs you should be fine.

If I had to eat a carrot, heavily-salted and thin slices with some type of dip would work. Cooked? No way!

Yes, here and there

Had pork Chile verde and eggs TODAY
Ate a small amount of marinated carrots and bell peppers from the salsa bar…added some salt
better than tortilla chips🤣

Carrots in stews and soups. Carrots sliced and cooked in butter. Carrots julienned in salads. All good to me. Portion size is everything.

I don’t really care for raw carrot sticks, even dipped in dressing.

Ever since I was on the Atkins diet in the early 00’s I understood carrots to be carby vegetables. The Diet Doctor suggests above ground vegetables only. I don’t eat carrots.

… and yet i have crashes where i will eat 6 chocolate chip cookies… go figure.

Very early on after I stumbled upon keto then found it had a name, I found something online saying that women on keto needed to eat a carrot each day for whatever BS reason or another (actually can’t remember) so I bought some carrots and ended up throwing them out.

I have very occasionally used them as flavour for bone broth but as I’m not a fan of that either…

I wonder if carrots are like potatoes in that the starch is not digestible unless cooked.

I don’t know about that. That’s a reasonable hypothesis, though. I found (when I did eat them), that they are like a lot of vegetables for me: I can handle them cooked but not raw. Zucchini and sauerkraut are like this for me, too.

I still eat carrots, if I use a mirepoix, such as in a stew. And sometimes they are part of coleslaw, when I eat them too. Otherwise, not much.

I haven’t eaten any carrots since I began Keto, but just because I have tried to be pretty strict, because I have tonssss of weight to lose. I might in Maintenance if it was a small amount within a recipe, but probably will not be adding it to any dishes myself.

If they are shredded on a salad or in something in small quantities, I will eat them. How tedious would it be to pick out all the shreds of carrot on a salad? :rofl: But I do not actively include them in my rotation of veg.

If I were to go to a restaurant or out somewhere to eat, I would do this too… just well we VERY rarely do. It makes sense for people that eat outside of their own homes though =).
