Carrots? Do you still eat them?

I never hear anything about them… What’s your thoughts?
Do you try to incorporate them, or have you programmed yourself to avoid them completely?

I eat them if they are part of a meal, such as a stew or coleslaw.

i include them in bone broth … but the solids get strained out after 48hours so i think my answer should technically be no.

I sometimes use them in a meal prep if they were on sale. For example, I recently bought a 1# bag of carrot chips when they were $0.77, because they would be so easy to just throw into the meal prep I was planning to do.

Usually, the only other carrots I use are part of veggie mix, such as a bag of frozen Normandy blend.

I can buy single carrots at the store where I shop. I use them in small quantities in vegetable fermentation where most of the carbs become food for probiotic cultures. Also use a mandolin to cut thin slices or matchsticks to add to salad mix, about 2” of carrot for 6 cups of mix.

I may have a few from time to time and don’t get too excited about them. They’re higher in carbs than the more carb friendly veggies but could still fit into keto macros for many.

They’re occasional and not large servings.

I have them in small quantities in stews and braised meat dishes, and cut into a salad rarely for a change. I’d say I go through a 3 lb bag every month or so for my husband and I.

I ate them often raw and cooked in the beginning. I found out about halfway through my journey that they were higher up in carbs and avoided them after that. (I don’t track food).

Then it became occasionally in a salad or with something like a cooked roast… I’ll eat them sparingly.

No, and I really don’t miss them, either.

Thinking back, I feel like the only time I truly enjoyed them was when they were roasted in butter or soaking up the juices of some sort of bird. Now they seem bland (they might not be, just how I choose to remember them) and not worth the hit on carbs.

Forgive me dear brethren, for I have sinned, but I sometimes not only eat the carrots in a stew, but also eat the potatoes too. (Assuming there are potatoes.) Maybe a few times per year.

I plan on making this for St. Patrick’s day:

Will invite people over, eat some of the potatoes and carrots.

Personally, I did not get fat eating any type of potato (never ate potato chips, fries, any potatoes at all). And if I eat them every once in a while, it’s not the end of the world or my keto lifestyle. I have to live a bit, every once in a while. Helps keep me sane.

I’ll add a small amount to a salad or use them in a mirepoix but that’s about it.

My druthers would be to avoid them, but they are my “peace offering” to my wife, who loves to cook, and uses carrots frequently. I don’t eat them with abandon, but just enough to keep the peace.
