As you yourself mention, it is important to get enough fat, because that is our main source of energy when we don’t eat carbohydrate. And it takes less than half the amount of fat to replace a given amount of carbohydrate. For example, 133 g of fat and 300 g of carbohydrate have the same caloric value.

Twenty grammes of sugar is a lot of sugar, especially when consumed all in one go. I imagine when you have one of those chocolate bars you feel good for a while, but then crash and feel worse than before. Ketones and fat-burning provide a much steadier level of energy.
