Carlshead Crack(ers)

(deana leone) #1

Ummmm crackers are back in my life! Just make @Carl_Franklin 's recipe and add in spices/seasonings to the almond flour before mixing into the cheese. Roll super thin and cut into squares before baking. Silpat mats make the transfer and 1/2 way turning e.a.s.y. bc they are perfectly sized to my cookie sheet so I just place one on top of other and flip quickly then back in oven. I added dried basil, oregano, parsley, & red pepper flakes. These are great by themselves or for dipping or for small egg salad, tuna salad bites.

WHAT to use my limited carb grams on?

I bet these would be good for nachos too…

What oven temp for the crackers?

425 F is what recipe calls for. I did 400 bc my oven runs hot.

With the right seasonings you could make your version of cool ranch Doritos  or rosemary thyme (like the triscuit flavor) lots of possibilities.

Hi deana,

I am having trouble finding the recipe for these crackers.
Are they the Carl’s Microwave Flaxseed Crackers that you have cooked in the oven?

Hi @Dbronson. It’s just the @Carl_Franklin Carlshead pizza recipe rolled to desired thinness. Here’s how I make it:
1 1/2 c shredded mozzarella
2 T cream cheese
in micro bowl until melty (technical term :joy:)

Add in dry ingredients of
3/4 c almond flour (not meal)
optional: other seasonings (olives, rosemary, Italian seasoning, cayenne, garlic, mushrooms,…)

combine well
roll out bn 2 sheets of parchment or silpat mats
bake 425 on parchment or silpat for 5-8 min until a little golden
take out, flip onto another parchment & bake on other side for 3-5 min

use w dips, guac, egg salad, tuna salad, tepenade…
you can also use this to make “flat bread”
they store really well

Hope this helps!
