Carbs in cocoa/high % chocolate

So what exactly are the carbs in chocolate? I have a 95% bar and it lists the following…

Total - 23.7
Sugar - 3.9
Fibre - 11.6

So what is the other 8.2?

I think it’s just the starch in the cocoa mass

which would imply that you need to include it in carb stats?

If it’s not fiber, and it’s not sugar alcohol, I would count it in daily carb intake, even if not 100% sure what it is. But probably starch.

Read list of ingredients…I discover big differences between manufacturers of chocolate. Sugar is often added. Even the +90% versions. Cocoa itself has carbs (and fibre).

Yes. The only thing I subtract is fiber and sugar alcohol from the total carb count.

with the % bars, the small % is added sugar as far as I am aware pretty much.

It actually baffles me a bit. I have stood in the grocery aisle and compared bars ingredients and macros labels and saw pretty significant differences. I tend to like Lindt for the short list of ingredients, relatively low sugar addition and not replacing the fats with a cheaper fat.

I agree. I was doing the same with coconut milks and a cream today and they were all different. THis bar is a Fair Trade type bar. We have a few in the high % - 70, 80, 85, 90, 85 (new). The flavour is 10 times better than Lindt which we also have. I did a taste comparison the other day and the Lindt pales next to the Fair Trade. The Fair Trade is alive with flavour whereas the Lindt just tastes generic and flat.

Nutrition labeling seems to be an inexact science.

I heard the author on a couple of podcasts now, but I haven’t read the book.

However, based on the podcast interviews calling nutrition labeling anything related to “science” would be too kind.
