Can you refreeze fresh sausage?

I just got Spanish chorizo, it comes frozen
I wanna defrost in the fridge and slice it into a few chunks and freeze them
is that safe to do that? the sausage only has refined salt, paprika, garlic powder, casing

It is generally considered unsafe to refreeze previously thawed fresh meat. Your best bet would be to thaw it, cook it and then refreeze it.

Sure you can. I do this type of thing all the time. Being carnivore lifestyle, meat is something I researched alot.

So defrost in fridge to the level of when you can cut it easily, don’t need to defrost it ‘all the way’ ya know…when it feels like you can cut it, cut it up and take what you want and get the rest back into the freezer.

Meat defrosted in fridge is fine to refreeze…meat defrosted out on the counter for a fast defrost or you put in warm water to sit and defrost really shouldn’t be refrozen.

As folks have stated above already, you can re-freeze or simply cook & then freeze and both methods work. Meats in general already go through this process if you purchase it from a store and then place it in the freezer until you’re ready to prepare it. Since it comes to the store frozen, it thaws out some while on display, so our freezing it is actually it’s second already. So unless you purchase a product, and then eat it within a day or so, placing it in the fridge and not the freezer, you will be re-freezing it anyway. - Just so you know, the reason most folks don’t like to re-freeze products is basically because it breaks down some, and you can lose flavoring the more you do this, since it’s the ice crystals that form and penetrate the meats during this process of thawing/freezing. So it kinda waters it down some each time because of this. So it being still edible is good, just not as tasty

Plus as Fangs pointed out, you can always let it thaw just enough for cutting purposes & then it won’t thaw out completely. (This helps) I do this myself, when I purchase larger cuts of meat that I don’t have time to sit down and take care of immediately. But mostly when purchased already frozen. Same if I’m cutting up a lot of Deer :deer: that were harvested, but don’t have enough room in the fridges to keep it refrigerated due to lack of space available? Takes a bit of time to properly trim and vacuum seal it all.

yea it is the breakdown in the ‘re-freeze’ process just like you said can change texture and ice crystals and more…I so get ya on that one!!
