Cacao Nibs

I bought these Cacao Nibs and they are too bitter for me to eat out of the bag. Has anyone found a way to make these palatable, or should I dump them in the trash?

I tried them quite a while ago. Didn’t care for them at all, even when I tried them in recipes. Sorry, I can’t help you.

They don’t really melt as-is. You need to finely grind them and double boil with sweetener and cocoa butter to make chocolate.

I like to use them in nib form as layer in fat bombs. Just fill molds up half way, then fridge for a bit, take out and sprinkle the raw cocoa on the solid layer then the rest of the mold with the rest of your fatbomb slurry.

I really wanted to like them as I’ve been quite the chocoholic throughout my life but maybe it’s the chocolate/sweet combo that works for me. :wink:

I was eating them with coconut flakes, some almonds, 1-2 strawberries and 1-2 tbsp of cream.
I didn’t mind the bitterness.

Some you get are quite sweet.

I usually do.

My latest is:
130g desiccated coconut
100g almond meal
30g cacao powder
30g cacao nibs
1/3 cup sugar free maple syrup
6 tblsp coconut oil

Mix. Roll into balls. Coat in desiccated coconut. Refrigerate and eat plenty… :wink:

Nibs…mmmmmm :yum: I have a bag on my counter, lol. I like plain nibs and nibs trapped in dark chocolate. I think they have a hint of wine in their taste…perhaps due to being alcohol free for a while, lol

Great ideas given so far. You may also try adding a few to salads as a topping for crunch or add to a Keto granola type recipe for a pop of chocolate.

They’re bitter as they are, but I love them in whipped heavy cream or high fat yogurt/cottage cheese.

I have had a bag in the refrigerator for a year. I had the same reaction as you and Jacquie. I hope someone gives you a good solution. I should probably toss mine at this point regardless. :wink:
