I’m trying to convince my husband that he can go keto and get rid of his diabetes but he has it in his head that he will have nothing to eat as he usually eats 2 sandwiches for lunch everyday. I made him the keto connect bread recipe and he hates it is there any other recipes that he might like better.

This sounds horrible - even cruel - but I find that brutal honesty can shock someone into the reality of their situation. Better that he be upset with such honesty now than be upset with you for not having evinced it once it’s too late:
It’s easier to get used to a loss of bread at lunchtime than to get used to a loss of limbs and eyesight in the terminal years of a tragically foreshortened diabetic life.
My Hubby hated most keto bread like recipes I tried, he loves this one. I eat very little “ketofied” food, these help my Hubby stay on the keto path.

My husband had the hardest time with giving up bread and had the same concerns about lunches. I make sure we have leftovers from dinner as often as possible, and keep the fridge stocked with things like cheese, salami, hard boiled eggs, avocados, etc so he can Easily throw something together. Now he doesn’t even have to think about it,
I still miss sandwiches occasionally. I think really the biggest part of it though is the practicality of them, the togetherness and seeming completeness. But it is just a habit. Once you lose the taste for bread - and you mostly do - it is all about the fillings. You just need to gradually get your head out of sandwich mentality. I just take things in a tupperware box. If he really misses the actual bread, you could keep trying to find a bread that he likes or maybe sidestep and provide a reasonable alternative like crackers? I have tried a few cracker recipes and they are not bad, especially once loaded with cheese or whatever. This way you can give him an alternative that is a bit easier to live up to. Bread is such a hard one to match and, if he is being stubborn, nothing you make will do. Once you chip away at that and he starts to enjoy the alternatives on offer, it could well become less of an issue. Bread could be symbolising a lot more than bread if you see what I mean - a symbol of holding on to what was and old comfort zone and being afraid to embrace what is new.
Becky, I’ve been tempted to try this recipe but have backed away from it when finding psyllium husk in huge packages at a hefty price at the market.
Have you–or anyone-- found it somewhere in a small size? I’m just about sick of buying stuff I spend a lot on and then throwing away.
I agree @Buttonwillow! I make trips to a health food store ($$$) and a local coop ($$) that carry most of these items in bulk bins so I may purchase in any quantity. I’ve discarded too many items that don’t work for me too. This is WI, not sure what you have in your area of CA. I haven’t checked, but it also may be available in the supplement isle in small quantities as a natural laxitive
